OCPL 2.3.2 - Install macOS Sequoia - Troubles

Hey guys, I was looking forward to using Sequoia but I ran into issues during the software update portion. I followed the instructions for OpenCore Legacy Patcher from the opencorelegacypatcher.net website and I also watched Mr Macintosh "Install macOS Sequoia on Unsupported Macs [EASY GUIDE]" for additional guidance. Since I chose to perform an Erase & Install, I now don't have an OS to boot into. I did however make a bootable external ssd copy of my hd using Time Machine but I can't seem to be able to restore from it or I at least I don't know how. Any help/guidance is much appreciated.

These are my specs: macOS Success' href='/2020/12/install-macos-catalina-on-supported-pc.html'>Catalina Version 10.15.7 MacBook Pro (Retina, Mid 2012) Processor 2.6 GHz Quad-Core Intel Core i7 Memory 16 GB 1600 MHz DDR3 Startup Disk Macintosh HD Graphics Intel HD Graphics 4000 1536 MB

PS. I think I made a mess of my primary hd as I tried to follow restore guides. Please see the picture of what disk utility looks like at the moment.
