OpenCore prints "End SetConsoleMode" then reboots after selecting "Install macOS High Sierra (external)"

Big Sur OC Hanging in Boot

I am attempting an OpenCore Big Sur install onto a Clevo P150SM. I have posted the XML Raw of my config.plist (used opecore plist sanity checker to pull). After selecting option 1 after booting off of my bootable USB, I am receiving these Errors on the screen. I work 9-5 so I apologize if I am slow to respond. Thanks in advance for any help from any willing people. This is my first ever attempt at this. If any other info is needed than provided below please let me know. Lenovo m720q / Big Sur - Only 1 working USB port
I was able to get Big Sur installed and running on a Lenovo m720q, it boots and functions OK. all the iServices run and it sleeps and reboots without issue.
My one big concern right now is that only 1 USB 2.0 port works. I was able to boot and install from a different USB port but it was horribly slow to the point that moving the mouse was like downloading a picture in the late 90s.
I looked into USBMapping using Hackintool and USBInjectAll.kext but when I look in the USB section of Hackintool and plug in a device to a USB port nothing changes on the screen like it simply doesn't recognize or acknowledge the ports at all.
