Kernel panics/freezes with OC 0.6.1/Catalina 10.5.7

This is my 2nd hackintosh after a 4 year break. So I got back in the game and built a hack after getting back into this sub and reading for several weeks and picking a parts list. It ended up being somewhat close to this system: https://github.com/SchmockLord/Hackintosh-Intel-i9-10900k-Gigabyte-Z490-Vision-D but there are obviously some differences.

My components:

CPU: Intel Core i5-10600k (not overclocked)
Mobo: GIGABYTE Z490 Vision D (v5 BIOS firmware)
GPU: XFX Radeon RX 580 GTS XXX Edition 1386MHz OC+, 8GB
Ram: TEAMGROUP T-Force Vulcan Z DDR4 32GB
Internal SSD: Samsung SSD 970 EVO 500GB
Wireless Network Card: YOUBO PC Hackintosh WiFi Card BCM94360CD 802.11a/g/n/ac 1750Mbps BT4.0 PCIe

Setup as an iMac20,2, though I initially did the setup as iMacPro1,1 (and Catalina 10.5.6 and OC 0.6.0). I made the switch to iMac20,2 after upgrading to Catalina 10.5.7 and OC 0.6.1, just to see if the random crashes/freezing would improve, but they have not.

As part of the switch to the iMac20,2 config, I enabled the iGPU, but I haven’t yet tested whether it outputs video (it is recognized by Activity Monitor, but I haven’t seen it show any activity yet).

The scenario is this — I will work for a handful of hours, doing work in FCP X or in my DAW or just general office stuff. Sometimes I will be pushing FCP X hard doing rendering for a 15 minutes at a time, exporting a video then running a Handbrake encode that takes a half hour. It goes OK, then I’m checking email or uploading the file to dropbox or some other seemingly innocuous task and everything freezes. No kernel panic notice on screen, but everything freezes and the fans spin up to full until I hit the reset switch and restart. Sometimes the restart will give me another handful of hours of work, but occasionally (and today) it will essentially freeze up right after restart or very shortly after.

Upon restarting after a freeze, I’ll get the Apple error report window, which I’ll usually look at. Here’s the contents of a recent error message: https://pastebin.com/G90mXSEZ

When the machine works, it is great. Everything works (all Apple services, etc). Tons of power, perfect for my needs. But the random crashes mean I have a difficult time relying on it for absolute mission-critical calls, etc. I do have a bootable clone of the OS drive in place, and Time Machine backups.

I’d love to figure out if this is a hardware or software issue of some sort. On the hardware side, I’ve heard of issues with XFX GPU’s in hackintoshes, so I’m naturally a little suspicious of that. The Wifi/bluetooth card has me a little suspicious as well, but for no good reason! I only have the wifi card so that airdrop and all the other iServices work as they are supposed to.
