NUC7i7BNH - Cannot get past the 100% load bar with Apple logo

I am new to the Apple game but recently fell in love with the architecture!

I am trying to load macOS Catalina on my NUC7i7BNH or NUC10i3FNH. Currently, I am trying the NUC7i7BNH. If you think using the NUC10i3FNH would be better, let me know!
The NUC7i7BNH has the following specs...
