Most stable, small Hackintosh that is resilient against sudden power loss

I want to build a portable rig for music making. For this I’m in search of a Hackintosh build that is small, stable and can survive a sudden power loss (without issues of damaging or corrupting anything).

When it comes to specs, I would love 16gb+ RAM, fast Disk I/O and a relatively fast CPU (top of the line not needed).

Would a NUC with a UPS be a solution to this? If so, does anyone have any experience with something like this? Any advice is greatly appreciated.
