Is the most efficient version of macOS for my hackintosh may be macOS 11.0 "Big Sur" or macOS 12.0 "Monterey?"

• Microsoft surface pro 7
• Touchpad delay, after typing.
• Hackintosh boot depends on time?

I Need only use xcode and my CPU and GPU are compatible with Big Sur

Any suggestion for g6400 and rx580 for only xcode ?
