Hi,
first, so there is no confusion:
- I found the troubleshooting blog of Dortania (https://dortania.github.io/OpenCore-Install-Guide/troubleshooting/extended/kernel-issues.html#stuck-on-eb-log-exitbs-start). Regarding this, I tried SetupVirtualMap on and off and both methods for EnableWriteUnprotector. DevirtualiseMmio has been set to "False".
- I'm new to the topic of Hackintosh, so I could have missed something obvious or made a beginner's mistake. Please consider that.
Now to the problem: When I try to boot, on the screen it gets either stuck at "RTC: Only single RAM bank (128 bytes)" or "[ PCI configuration begin ]". In the logs, however, in both scenarios, the last entry has been "#[EB|LOG:EXITBS:START]".

PS: In the google drive link is my EFI folder as ZIP file (I reset everything in PlatformInfo → Generic to Sample.plist entries as I heard you should keep them private), pictures of both RAM and PCI issues, and their corresponding logs. I use Opencore 0.9.5 and I am installing Big Sur.
