Can I just wipe my MacBook and start over with a fresh install?

I’ve installed Ventura 2012 15” MacBook Pro in the hope of resolving intermittent Wi-Fi connection issues which I’ve had since Success' href='/2020/12/install-macos-catalina-on-supported-pc.html'>Catalina. Instead I now have further issues with Wi-Fi and now no Bluetooth connectivity as well. I’ve tried replacing the Wifi Bluetooth card and that has not resolved the issue. I’ve also read somewhere Success' href='/2020/12/install-macos-catalina-on-supported-pc.html'>Catalina has caused issues with Wi-Fi, so I want to go all the way back to Mountain Lion and see if that resolves Wi-Fi and Bluetooth issues. Problem is no Wi-Fi, so I can’t go into recovery mode and restore and I’m unsure how to remove open legacy patcher as well.

Do I just create a bootable install memory stick and then wipe the hard drive on my MacBook? If so, which partition should I not mess with to avoid issues when reinstalling?

Any advice would be much appreciated.
