Question on dortania.github.io/builds -- which RELEASE to get?

Hi there, I have a noob question about the dortania.github.io/builds page (and maybe this is me just not understanding the Github build process) -- say I just want to download the latest release for a particular package, which one should I be getting? For example, the current OpenCore release (as I type this) is 0.8.3: https://github.com/acidanthera/OpenCorePkg/releases -- however in the Dortania builds page it shows 0.8.4 with a bunch of commits and both DEBUG and RELEASE compiles:

...my question is, which of these should I be using? Is it the top-most one? The bottom-most one? Does each associated compiled build only include that particular commit, or does it include all previous commits up to that point?

...or is it generally safer to stick with the "official" release even though it may lag the latest bleeding edge build (in this case, stick with 0.8.3)? This is actually what I typically do, but in this case ProperTree just gave me a message saying it was snapshotting my folder at 0.8.3, which differs from its target of 0.8.4.

Any advice would be greatly appreciated!
