Special thanks to user "cancel cancelled || M4kI9H7" and "Timon" over at discord /r/Hackintosh Paradase for helping me out. I was making a stupid mistake of booting from the upgraded OpenCore dummy USB and pointing to the EFI of my Installation SSD. Once that was sorted, everything went smoothly.
Not working

- Apple TV does not play anything
- Netflix does not work in Safari. Works fine in Chrome
