After lots of fiddling (and invaluable help from 1Revenger1 and others), I think I've resolved all the issues I was having with my OpenCore installer.
Now, it gets to the selector — I select "Install macOS Big Sur" — it produces a bunch of logging — it stops — and then a "forbidden" circle (gray, with a diagonal line) and, below that, a line of text with an Apple support URL.
This is (I presume) an advance beyond where I was earlier, when the screen just went black (which meant video...
