Lenovo X1 Carbon Disk Unwritable

Here's the context: I am an intermediate hackintosher. I've successfully completed a ASUS UX330UAR build with all but WiFi working using Clover. However, I upgraded my laptop to a X1 Carbon Gen 7 (20U9005MUS) earlier this year, specs are i7-10510U, 16GB RAM, Intel UHD 620, M.2 2280 NVMe (KXG6AZNV1T02 TOSHIBA). Thus, I recently took on the project of hackintoshing this laptop as well :)

Here's the issue: I have successfully created a bootable USB following the OpenCore guide using minimal kexts (IntelMausi, Lilu, VirtualSMC and WhateverGreen all loaded through config.plist) and patched uhd graphics so I'm ready to install MacOS, using USB keyboard and mouse. However, when I open diskutil to format my drives, I cannot mount or partition my SSD. When I take a look at the media info, my NVMe appears to be unwritable, unverifiable, unrepairable, unbootable and at max capacity. At first I thought I might have bad luck with my NVMe since many users report having issues with NVMes however since I still had my M.2 from my first build and a M.2 USB connector thingy, I gave it a try and plugged it in. Same issue. No matter what drive / USB, they all appear non-writable and cannot be mounted or partitioned. Interestingly enough though, diskutil does show the different partitions correctly and their sizes.

Whenever I try to mount, I get the following error.

NVMe Mount Error (com.apple.DiskManagement.disenter error -119930868)

I've googled it and no luck, seems like nobody else has encountered this error.

I also tried mounting it manually through terminal by creating a directory at /Volumes/XYZ and mounting (NTFS formatted) using sudo mount -t msdos ... but to no success either. Same error message. I've also tried mounting FAT32 partitions and same thing there.
