OpenCore post-install issue with booting windows again

Hi, i managed to install Success' href='/2020/12/install-macos-catalina-on-supported-pc.html'>Catalina on my PC (see specs below). I have one M2.sdd with windows and SSD for Hackintosh. Now Im able to boot osx if USB is attached and i wanted to configure dual boot. I followed the steps in:

https://Dortania.github.io/OpenCore-Post-Install/universal/oc2hdd.html#grabbing-OpenCore-off-the-usb

But i don't see the USB stick. If I also mount the SSD with Success' href='/2020/12/install-macos-catalina-on-supported-pc.html'>Catalina, the mounted disk is empty... So how can i now configure the OpenCore and copy my config from the USB? The mouse and keyboard attached in USB work without any problem
