Big Sur/OpenCore 0.6.8 installation on my Gigabyte GA-Z170-HD3P: stuck boot

Hi all,

I have my Hackintosh with Success' href='/2020/12/install-macos-mojave-on-supported-pc.html'>Mojave running smoothly with Clover.
I wanted to install Big Sur on it without screwing up my working OS so I bought a new disk to install on.
This is my hardware:
- Gigabyte GA-Z170-HD3P
- Intel Skylake i5 6600
- 32 GB Corsair Vengeance ram
- Radeon RX570 8GB
- Crucial P5 NVMe 500 GB

After trying several configurators that were supposed to ease the process I decided to follow Dortania's guide religiously and do everything by hand.
