[NEED HELP] Triple boot (OpenCore...etc) or VM ?

Hello,

I apologize in advance, I have a rather broken English but I will try to explain my situation as best as possible

I am a student and have a setup that I want to use for gaming through Windows, MacOS for everyday life and PopOS! for the development

Currently I am only on Windows 10 and I don't like to use it all the time, only for gaming I have two very good SSDs and I would like it to be: 1 full SSD 2TB for Windows 10 + game 1 SSD divided into 2, one for PopOS and one for MacOS I don't know which is better between a virtual machine for these OS, or a triple boot.

I hate Windows for development and for virtual machine use. PopOS is doing better but PopOS is the bone that I will only use for personal use (related to computer courses)

If I make a virtual machine, for Windows and PopOS, my GPU would have to be used normally (for performance) and that's what I'm afraid of, the loss of performance too big for virtual machines compared to a triple OS.

What do you recommend ?

For the moment I do not know which tutorial I started with to have an optimized OS with what I want to do and my performance

NOTE : With my monitor it is possible to cut my 49 "screen in half, would it be possible to use a display port (or HDMI) for each system?
