HDD and SSD missing from disk utility while trying to install Big Sur from USB

I am trying to install Mac OS big sur along with my windows 10. I have been following dortania's opencore guide along with a youtube video for the entire process. I managed to boot into my usb but get "busy timeout" error along the way and it takes 10+ minutes to just get into the GUI everytime.

Even tho I get into the GUI, I can't find my HDD or SSD in the disk utilities.

Specs:

Acer Predator Helios 300 i7 7th gen Nvidia GTX 1050ti I have a 128gb ssd where my Windows 10 installation is located along with a 1TB hdd where I would like to install mac.
