Windows drive missing from Startup Disk

Hi all,

I have a working 11.2 install using OC 0.6.6, with Windows 10 and Mac OS on seperate drives. Multiboot works fine through the OpenCore picker, however I want to be able to use the Startup Disk utility like on a real Mac. The windows drive does not show in the Startup Disk, so currently I can't boot from Mac to Windows without using the OC picker. The dortania guide only covers installing drivers on Windows.

What should I do to make the drive visible in Startup Disk?

Observations:

1. The windows drive is not mounted in MacOS by default
2. I have never ran the BootCamp utility in Mac OS
3. I have configured LauncherOption
