Does anyone have a solution for removing apps like chess, podscasts, and all the other bloat in Big Sur?

I upgraded from Success' href='/2020/12/install-macos-catalina-on-supported-pc.html'>Catalina to Big Sur today and everything works great except disabling sip doesn’t work like it used to… sip is disabled, I have the proper hex code in my config plist but no matter what I try I cannot write to the rootfs. I read on opencores site that you need to mount a specific partition with a specific command but it didn’t quite work for me, has anyone had any luck?
