SFFPC ITX Dual Boot Windows / Hackintosh vs Ryzentosh

Testing the waters - I've been following this page for a bit but I'm fairly new to posting on reddit so please bear with me. I'm a long term user of both Windows (for work/engineering/games) and Mac OS (personal, coding, very integrated into the Apple ecosystem). My goal is to have an sffpc that I can use to dual boot windows and mac to play games and code. I play games on the side, but nothing graphically intensive so far.

Basically I'm looking at Intel and AMD CPUS. Before you say anything - yes I understand that AMD hackintoshes are difficult to get right and can become unstable and yes Adobe is funky. But I know that to get it to work would be worth it in itself. And AMD CPUs have really good value. Correct me if I'm wrong, but basically provide good value and I think eventually AMD would be good with Hackintosh.

I've looked through the Hackintosh and the sffpc subreddits and the amd os x website and tonymac86, but could really find a post that could fit my needs. I modeled some of the parts off some peoples rigs, but I wanted to see what thoughts would come my way.

I put two lists together to see what the people think. I'd love your input and what you think of the value and longevity, what you would change if you could, what recommendations you have. I'd basically like to purchase a bunch of parts that would last me a couple years so I know the CPUs seem like overkill but I just wanted to get a feel of things. If this helps any, I was thinking maybe NCase M1.
