Still stumped on SMBIOS selection.

system specs: i5-8600k, Gigabyte Z370N WiFi, 16gb Ram, Sapphire Pulse RX 580, 1.25tb Fusion Drive over 970 EVO 250GB m.2 NVME and 1Tb 860 EVO SSD

Currently using 18,3. Tried out 19,1 which according to everymac, would make the most sense. When I switched to it though, my sensors stopped outputting the cpu temp. I have VirtualSMC and am using iStat Menus to monitor them. So I switched back to 18,3 because I didn't want to take the risk of switching out VirtualSMC for FakeSMC because everything is working well at the moment. I've had multiple people tell me to switch to iMac Pro 1,1. I tried that and disabled my iGPU in both Clover Configurator and also in BIOS. I thought it would work out well but then I lost preview functionality (i.e. jpgs would never load in the preview window). In the past, (before I enabled my iGPU correctly) I solved that by using NoVPAJpeg.kext but I've heard it's been deprecated. So is there any way to fix the issues with preview/finder and also have the iGPU disabled?

How should my hack be configured to get the best performance? I know that 18,3 isn't ideal, 19,1 will give me better power stepping for my CPU, and 1,1 will provide the best GPU performance. I'm not doing any video encoding but I do use my GPU when I play games. Thoughts, suggestions, hints, tips? All are welcome. Thank you and have a good Sunday!

P.S. My eventual plan is to scrap the fusion drive, swap out the 250gb m.2 for a 1tb m.2 and then use the 860 EVO SSD as my backup drive (currently I'm using an external drive that connects through USB 3.0). Just wanted to explain since people have scratched their heads at the fusion drive config. Long story short, my old MBP had a tb of data and I didn't want to split my boot drive + data over two drives manually.
