Apple Stops Signing iOS 12.1.1 and iOS 12.1.2, Downgrades and Restores No Longer Possible

Apple has stopped signing iOS 12.1.1 and iOS 12.1.2 which means that it is no longer possible to downgrade or restore to those firmware versions.

Currently, Apple's latest firmware is iOS 12.1.3. If you accidentally update or restore, you'll find yourself on iOS 12.1.3. Developers have been seeded with iOS 12.2 beta and Apple has announced that a firmware update (likely iOS 12.1.4) will be coming this week to fix a major bug with FaceTime.

Those interested in jailbreaking are typically advised to stay on the lowest firmware possible. Ian Beer recently released a kernel exploit that works on iOS 12 - 12.1.2. It's very possible that other developers will build on Beer's exploit to create a public iOS 12 jailbreak.
