Sonoma 14.0 > 14.1.1 update left 2012 mini unbootable

I've got a late 2012 mac mini running OCLP that I use primarily as a BlueBubbles server. A while back I updated it to Sonoma 14.0 in preparation for new iMessage features. Today, I attempted to update it to 14.1.1 with system settings as I'd heard 14.0 had some pretty bad issues. I made sure to update OpenCore before the macOS update to attempt to prevent issues. I left it unattended (as I usually do), and when I came back it seems to be bootlooping between these two screens. I can't use my macOS installer USB as it complains about not being able to downgrade the machine. Reboots do not fix the issue. Internet recovery is not usable as it only loads Mountain Lion, which cannot mount the APFS disk.
