Boomer in need of help, open core install cant boot USB

Before I forget, specs...

ASrock X570 Mobo

Ryzen 3600

RX5700XT

Sata SSD.

I had a Catalina insal working near perfectly for a year until something started to ago wrong with the SSD and it was no longer visible (macOS would freeze and die, then would boot straight to windows and windows couldn't see SSD). So I bought a new SSD and thought it would be a simple case of using my old Instal USB to reinstall and all would be fine, but for some reason, despite the USB not changing, it wouldn't get through the instal. No idea why it was failing and it made no sense so I gave up and decided to refresh my memory and build a new USB with Big Sur. Went thought all the How to guide and thought I had it in the bag, but it won't even boot to the installer, just black screen then straight back to the boot options/bios.

Before I deep dive into debug builds, which to be honest I feel are going to be beyond me, I thought I'd ask if anyone has had a similar experience and whether they can spot a simple mistake in my EFI folder (linked - and not against rule 9 as I'm asking for help with it).
