Help with picking parts - Am I on the right track for my needs?

I've been lurking on this sub for a good 6 months now, and I'm now feeling like I'm ready to start planning how to actually build something. I tried to organise my information as best as possible, sorry if it's too messy!

I'm ultimately looking at building something that can handle heavy design/art use and streaming

I need access to AirDrop and AirPlay

Would prefer to be able to keep it up to date on major OS releases

4K support would be cool, but not necessary. I'm all for future proofing!

I'm not looking to go overboard, I'm more looking for something that is functional and won't make my wallet cry, but is still better than what I currently have. The top-end of my budget is probably somewhere around $780-$800 for everything, but I'm aiming more for the $600-$700 range. ($400-$500 US roughly)

I want to have both Windows and MacOS on the machine, would I be better off partitioning one ssd or having separate drives for each OS?

I created a build in pc parts picker of my favourite options, again, I have no idea if I'm on the right track.

I currently use a 21.5" Late 2013 iMac (Specifically this one) - UPGRADED TO SSD LAST YEAR

I've been tossing up whether or not I want to upgrade the RAM in this one or build a hackintosh early (my original plan being wait until my current computer dies and then build a new one, but I feel that will be a looooong wait).

Taking the screen off was such as hassle last time I did it and I'd rather not have to go through that process again ugh. This will likely be a longer term project, so I'm not looking to buy anything right now, but as my work gets more intense and graphics heavy, I start to get a little bit of struggling which annoys me since I can't replace the GPU in my mac and my work is graphics-heavy a good portion of the time.

I'm pretty sure that I got my current mac in early/mid 2015, and it still runs fine, but I've just always wanted to build a computer. I used This compatibility list to pick my parts, but I'm not really sure if I'm on the right track/would all work nicely together

I have no idea how adding wifi works, do I need to buy an adaptor even if the motherboard I choose has wifi built in? Does it work for Bluetooth too??

Also any suggestions for (cheapish, but good colour space) monitors would be great! If I'm not going to upgrade my whole setup, I've been looking at upgrading my displays for a while.
