Can I run Xcode with Simulator without too many lags on Catalina?

I'm looking to go back to studying Swift, and I'm thinking of installing Catalina OSx in dual boot on the machine I have current.

Can it support Xcode by running Simulator without running slow? Follow my setup below:

CPU: Intel i7-6700K
GPU: Intel® HD Graphics 530 / Nvidia GTX 1080
RAM: 32gb Corsair Vengeance LPX 32GB DDR4 2666
Motherboard model: Gigabyte Z270 Gaming 3
Audio Codec: Realtek® ALC1220 codec (Motherboard)
Ethernet Card: Killer™ E2500 LAN chip (Motherboard)
Wifi/BT Card: Plugable USB Bluetooth 4.0

Currently I have a ssd m2 with Windows 10, I think of buying a 120gb SSD (Kingston A400) exclusively for OSx, avoiding possible problems in the future.
I still need Windows to play and also develop some programs for Windows. I saw through this video that even then, it can happen that Windows interferes with the dual boot of the machine, can this be a problem in the future?
