Mojave nstaller stuck at MACH Reboot after previously working

I have a Dell Latitude E5530 with an i5-3230m and 8 GB of RAM. I used my trusty Mojave installer to get it working in the past. Now trying to reinstall to a different internal hard drive and it no longer seems to work. I keep getting the backtrace error followed by "Attempting system restart...MACH reboot".

After many attempts I took my 240GB SSD out and copied the EFI files to my main desktop Hackintosh including the kexts and config.plist (all files in the Downloads folder). I also took the Mojave flash drive installer and put the confog.plist from the Dell on it and renamed it configdell.plist. This way I could go into Clover --> Options --> Configs, and change it from the initial config,plist. This works as I then check the SMBIOS and it's listed as a MacBookPro10,2. Still, no matter what I try I get stuck at the same place and can't get to the installer. I've tried using the default config.plist and setting the SMBIOS to the MacBookPro10,2 and the Graphics platform id to 0x01660004 (HD 4000 graphics), but no luck. I've also taken out the destination SSD and tried the USB installer in a 2.0 port and a 3.0 port.

I still have the original SSD with the working system on there but want to use that in my desktop system instead and replace the laptop's drive with a 120GB SSD. I am really only going to use this as a MainStage system. I was hoping to use the existing 240GB SSD I have Mojave on so I can resell the E5530. I'm looking at other posts from google which refer to Tonymacx86 and it mentions about dropping tables, but the ones I see there are not any of those I can access from the Clover Options (unless I'm missing something).
