After 1 whole week of trial and error I have finally got my build up and running with nearly everything working. This was my first hackintosh build, let alone PC build in general. Before this journey I had no prior knowledge of building a PC, so it was a tough ride but I was able to push through thanks to the helpful hackintosh community and the forums that are out there.
This is a Vanilla build using clover and I tried making it the most minimal I could.
Here is my EFI Config: (adding link soon)
I am running the F8 Bios: (click on the spoiler to see the Bios modifications)

Now make the following settings:
- Tweaker
- Advanced CPU Settings → VT-d → Disabled
- Extreme Memory Profile (X.M.P.) → Profile 1
- Settings
- Internal Graphics → Enabled
- Above 4G Decoding → Enabled
- Thunderbolt(TM) Configuration
- Security Level → No SecurityThis will trigger a 'Save & Exit' dialog so press ESC to close the dialog.
- Discrete Thunderbolt(TM) Configuration
- USB Configuration
- Boot
- Windows 8/10 Features → Other OS
- CSM Support → DisabledSome devices such as GPUs may require CSM Support to be enabled. There is no harm in setting this to either Enabled or Disabled. Use the setting that works best.
- Save & Exit → Save Profiles → Save to Profile 1This preserves the firmware settings for easy recovery.!<

Here's what works:

- iMessage /FaceTime
- Sleep / Wake / Shutdown / Restart
- AirPlay
- NVRAM
- WiFi and BT of course, thanks to the 'Fenvi T919' which gave me no issues OOB
- Both ethernet ports and TB3 hot plug capabilities
- etc....
Here's what doesn't work:
- Unlock with apple watch
'Your Apple Watch must be signed in to iCloud to allow it to unlock your Mac.'
I do think that this is fixable and I will update this thread if I get it working.
Other than the apple watch issue I would say this is a solid build and would recommend it to somebody who wants a powerful system with lots of potential.
