Run osx via usb on a NUC8i7HVK

Hi,

I have got a NUC 8i7HVK as my main office machine.

I was planning to buy a mac mini but I need windows as much as OSX, so I thought that this NUC was cheaper and also has dedicated graphics that is much better than any intel GPU; and make it a dual boot hackintosh.

Now, considering that the internal hard drive is just 256; I was planning to use an external drive to put OSX and the apps I use on it; while Windows run from the M2 drive inside the NUC.

Is this even possible? From what I recall in my OSX days, you can't run the OS from USB entirely; you can move the system folders via hard symlinks to get more space, but at boot the OS must be loaded from internal drive.

Is there any guide about how to get a working bootable USB drive or thumbdrive, to work as hackintosh main drive?
