Possible to do a vanilla AMD install?

Hi pros, I am a noob. my build is ryzen 2700, Asus x470i, 2x16gb Corsair vengeance lpx 3000, gtx 1080, wd blue 1 tb SATA m2, Samsung 970 evo 1 tb, Samsung 860 evo 2 tb.

I’m thinking of getting Mojave and maybe swapping to a Vega 56/64 (I know NVIDIA web driver dependent gpus not supported on Mojave).

My question is:

(1) should I get the Vega to get Mojave or just go on high Sierra? (Seems non future proof)

(2) As of now do I still need the custom amd kernel for a vanilla install? Is it safe to use or possibly compromised in terms of security?

Use case: trying to quit gaming. Word processing, some amateur video editing (multiple NLEs), want somewhere big to sync and manage my full icloud photos.
