Big Sur keeps hanging at boot

I’m trying to get Big Sur running on my laptop and the specs are

CPU: i7-1165g7

RAM:16GB

GPU:intel iris xe graphics

Storage (where macOS is installed): 64GB usb 3.0 flash drive (the installer can’t see my nvme drive I think it has to do with it being an sk Hynix)

I have followed the guide, done everything I can, searched Reddit, Google, messed with the Kexts and the config file it a bunch of different ways and can’t seem to figure it out

Other info: I have the the USB 3.0 drive plugged into a usb 3.0 hub and the installer picked it up and actually installed macOS. It just won’t boot passed the error message in the linked photo. I know I also have some kexts I probably don’t need, like some Ethernet ones, haven’t cleaned those up yet but I’ll get around to it.

Any ideas?
