First post and First Hackintosh Build! Help me understand speeds please!

Hey everyone, i'm thinking of building my first hackintosh! I've never built a computer before so i'm afraid/excited, but i think/hope with the tools available it will go well.

Onto my question- Since I am an audio content creator (recording/mixing/engineer), I've been eyeing the Blackmagic Multidock 10g for a while. It's a usb-c ssd enclosure that supports up to 10gb/s. Now that I've decided to go hackintosh, I'm wondering if I would benefit in read/write speeds by running my internal 2.5" Samsung 860 pro ssd's in this enclosure VERSUS the read/write speed i would receive by running the internal Samsung ssd's off the SATA port found on the GIGABYTE Z390 DESIGNARE motherboard.

Although I would enjoy the ability to easily swap ssd's with the multidock enclosure (without having to open a computer case), I don't want to waste money by buying it if it won't yield me faster speeds than the ssd connected via SATA.

Please note the designare motherboard has usb-c thunderbolt 3. The Multidock supports USB-C 10gb/s. So that's the connection I would be making via an USB-C cable if I went with the Multidock. From my understanding, the Samsung ssd would just connect to the 6Gb SATA connectors of the motherboard. And although SATA III is 6gb/s, the SSD would only get its normal 550 mb/s while connected to SATA III. However, thunderbolt is faster (40gb/s) and since it is found on the motherboard, I should reach faster speeds than the advertised 550mb/s if i opted not to install the ssd's internally to the motherboard and instead went with the Multidock's 10Gb's external ssd enclosure solution...right? Maybe I could reach 600-700mb/s or more If I went that route?

Speeds get a bit confusing for me so please use layman terms when responding please lol. Thank you for anyone reading!
