Need some help with getting the BigSur installer to boot with OpenCore 0.7

CPU: i7-4790k
GPU: RX Vega 56
MB: Gigabyte Z97X-SOC Force

Followed the dortania guide, obviously. From what I can tell the boot fails so early I can't even get an actual error. Not sure what went wrong here, followed the guide exactly and I'm very knowledgeable when it comes to hackintoshing, I got tons of other hackintosh machines running. Had it running on this very machine, but with clover about a year ago. I used the windows versions of the guide as that's what's running on here currently, but I have other real macs available if it's better to do it from there.
I have an ACPI-EC.aml and ACPI-PLUG.aml in my ACPI folder that I created using SSDTTime (would totally do it manually, but that part of the guide seems to be missing or removed). Config can be found here. Nothing special about it, after the first fail I changed the SMBIOS from iMac15,1 to iMac19,1 cause some googling said that would help, but it didn't. The sanity check also looks okay to me, I assume the discrepancies are due to the OpenCore version mismatch. During boot it fails at IOPlatformpanicaction -> AppleAHCIDiskDriver and tells me to contact Apple about it (yeah, right). OpenCore error log can be found here, but I've already been told it's just useless garbage. The EFI looks like this.
As for the BIOS settings:
