Dual boot two versions of macOS with two grahpics cards

I've got myself into a bit of a situation. Essentially I’ve had a solid HS build using a 1080Ti for the last 3 years, Blender worked great with it. Recently bought a 6800XT and sorted a Big Sur install. Blender support for Metal doesn't exist and Apple ditched OpenCL so my options for rendering were always going to be either; AMD ProRender or Octane (I really need to use Cycles not interested in this option). Sadly, AMD ProRender doesn’t seem ready for prime time, crashes, etc. Cannot seem to get it working at all.

So I started to wonder if I could somehow use both graphics cards in one machine, essentially shutting down, unplugging the PCI plugs, plugging the other in, i.e, when I need to run HS with the 1080. Naively, I tried to test this and ended up borking my Big Sur system, booting from the HS drive (Clover) worked fine but seemed to create an ‘Update’ partition and I could no longer boot into Big Sur when I switched the graphics cards. Still trying to figure out why the first Big Sur install shows as ‘Big Sur - Data’ on the OpenCore boot screen (Big Sur is the name of that drive) as opposed to just ‘Big Sur’. Guess HS might have read the newer EFI’s and freaked out. In HS it had a notification saying something like ‘Some of the attached drives are not supported on this OS’. Ended up reinstalling Big Sur on a spare drive so have that and the 6800XT running fine again.

Anyway, crazy idea but wondered if there was anyone out there who’d tried something like this, or has any advise?
