What hurdles would I have to jump to boot Windows, macOS and Linux off the same system?

The plan for the PC I want to build is to have a 500GB NVME SSD for Windows and a 1TB SATA SSD, with two 500GB partitions for macOS and Linux. Would this be possible? Would having the OSes on a mix of different drives and partitions cause problems with OpenCore?
