Can't install on my Asus P9X79 Deluxe, i7 3930k (Sandy Bridge E) (HEDT)

Hey guys!

I'm not really new to hackintoshing, but new to using OpenCore. Loving the documentation and just the design of it so far.

But I'm having problems getting the install to start on my desktop.
I tried Big Sur and Catalina, I get the same error both times. Different USB sticks.

Specs:
Motherboard: Asus P9X79 Deluxe (X79)
CPU: Intel i7-3930K (Sandy Bridge E, no integrated GPU)
GPU: AMD Sapphire RX580 8GB

I followed the guide at https://dortania.github.io/OpenCore-Install-Guide/config-HEDT/ivy-bridge-e.html

I get to the OpenCore selection and after selecting the "Install macos" entry, I soon get stuck at "PCI configuration begin".

I used this SSDT, because I have an X79 motherboard: https://dortania.github.io/Getting-Started-With-ACPI/Universal/unc0.html and I suspect the problem is in the SSDT-UNC.aml file not being compatible with my motherboard, but I'm not sure how to fix it (see boot log).

I tried decompiling both in MaciASL, but I'm not sure what to look for or how to change the SSDT so it works.

Any help would be greatly appreciated.
