Big Sur - Installer "Damaged"

So I'm trying to install Big Sur from scratch. I used to run a Hackintosh many years ago, but it's now been a while. I'm following the Dortania guide for Vanilla Open Core install on AMD (specs below). I feel like I'm doing everything correctly, my config.plist passes the sanity checker (will post a link here to my config.plist if helpful). After some fiddling with BIOS I'm able to get the installer booted, but when I try to install I get the following message:

"This copy of the Install macOS Big Sur application is damaged, and can't be used to install macOS."

I've tried setting the clock back in the Terminal, as well as in the BIOS. I've tried re-downloading the installer and remaking the USB drive. But still the same error. Any ideas?

Specs:

- Ryzen 5 3800x

- Gigabyte B550M Aorus Pro

- Radeon RX 5600x
