Is there anything i can do to make sure that i can disable SIP *before* installing Big Sur?

I installed MacOS Big Sur using opencore last week, it didn't work out so well.. i need very specific linux applications which would require me having to disable SIP and having read/write access to the filesystem. even after running csrutil disable in the recovery terminal, and even trying to mount the fs as read/write didn't work.. permission denied everytime. Is there anything i should do to the config.plist or any other files BEFORE i re-install?
