Catalina Installer crashes with no specific clue as to what is wrong

CPU: AMD Ryzen 7 2700X

GPU: [0] Sapphire RX 580 Nitro+ [1] MSI Geforce RTX 2070 SUPER Gaming X Trio

RAM: 32 GB Flare X 14-14-14-34 running at 3000MT

Motherboard model: MSI X370 Gaming M7 ACK

Audio Codec: Realtek® ALC1220 Codec

Ethernet Card: Killer E2500 Gigabit LAN

Wifi/BT Card: Killer(R) Wireless-AC 1550 Wireless Network Adapter (Intel 9260NGW)

What guide/tool followed: OpenCore Install Guide

What part I got an issue with: I can boot into the installer fine, I can erase and prep the disks (I've got two disks that I'm trying to use for this, a Samsung 970 EVO Plus and a Samsung 850 EVO) but when I go to select which disk to install Catalina to, I get booted back to the Disk Utility screen with no obvious errors. Looking in the Installer logs I can see that the installer has crashed, but no idea why. Here's the logs: https://pastebin.com/Xh1XhbTT

What files/config I am using: Standard files as per the guide
