What part I got an issue with: I can boot into the installer fine, I can erase and prep the disks (I've got two disks that I'm trying to use for this, a Samsung 970 EVO Plus and a Samsung 850 EVO) but when I go to select which disk to install Catalina to, I get booted back to the Disk Utility screen with no obvious errors. Looking in the Installer logs I can see that the installer has crashed, but no idea why. Here's the logs: https://pastebin.com/Xh1XhbTT
