Why am I running so hot?

I'm stumped!

I'm running an OpenCore 0.6.0/Catalina 10.15.6 10900k build with an Arctic Cooling Liquid Freezer II 280 and a Sapphire Radeon RX 580 in a Fractal Design Define R6 USB-C case.

This is my first self-built computer, so at first I added too much thermal paste and had the case fans/radiator fans pointing in inefficient directions. But I just deep-cleaned and re-seated the Liquid Freezer using MX-4, and made sure that the fans and airflow made sense (so the radiator fans draw in air at the front, and the three case fans push out air at the top-rear and back).

Yet I am still idling around 50-60C, and any sort of heavy processing (which I do a lot of; lots of virtual instruments, audio effects, etc.) pushes me to 100C!

This is true at stock speeds as well as when slightly overclocked. I'd like to get to at least 5.0 GHz, but I can't do it this way...

What am I missing? I know I did everything "right" this time. My room is more or less room temperature, and in a basement, so it's not like the environment is especially warm...
