Need help selecting video editing GPU (and any other pointers) - Gigabyte Z490 Vision D, i9 10900K, Radeon VII 16GB / RX 5700 XT

Hi everyone,

I'm preparing my first Hackintosh build for pretty heavy video editing, coloring, rendering and other work related tasks.

I think I've made my mind up on most parts, but the GPU is still to be chosen. I started this build before summer, but due to vacation etc the original card I had in mind, the VII, has become more and more unavailable. I know a few are floating around eBay but I'd prefer not to buy second hand as I have an EU-based company and thus can buy VAT deductible products if they're sold new from another company.

Ideally, I want as much GPU as possible. The VII would give me 16GB, but I might have to settle for an 8GB 5700 card. The option I've found somewhat suitable would be the Sapphire Radeon RX 5700 XT 8GB Nitro+ OC.

Would this make sense? Do you see any other pointers in my build, found below?
