Installer stuck at "AppleNVMe assert failed" with OpenCore (following Dortania guide)

Motherboard: Gigabyte Z170X Gaming 5
CPU: i7-6700k (Skylake)
GPU: Gigabyte Radeon RX 5700 XT

I previously was running High Sierra and a GTX 970 with Clover... After swapping the GPU, I can get it to boot as-is, but only one monitor works, and the graphics are super glitchy.

I figured I might as well re-configure everything with OpenCore and upgrade to Catalina (one of the reasons I got a new AMD GPU).

I followed the guide here: https://dortania.github.io/OpenCore-Install-Guide/installer-guide/mac-install.html#downloading-macos,made all of the config.plist modifications for Skylake, and used SSDTTime for generating SSDT-PLUG.aml and SSDT-EC.aml (and grabbed an off-the shelf SSDT-USBX, because that's needed for Skylake as well). Confirmed everything looked okay with the slowgeek sanity checker.

But... I can't get the installer to boot. It fails with "AppleNVMe assert failed" (I tried both USB2 and USB3 ports as well, because I've seen that as possible reason.)

Not really sure what else to try at this point... I vaguely remember running into this issue with the Clover setup as well.. I think with Clover, the "Rename SAT0 to SATA" patch fixed it, but I'm not entirely sure.
