Advice buying itXMobo + CPU for new Hackingtosh

Hi I planning to replace my 6 year old hackingtosh with a new mini Itx build. The old machine is very stable, running Catalina 10.15.6 using Clover 5120. And dualbooting windows 10 for some afterwork gaming.

My old system:

Mobo: Gigabyte GA-Z87-HD3

cpu: Intel Core I5 4430

gfx: Sapphire RX 580 Pulse 8GB

memory: 16 GB 1600 MHz DDR3

wifi/bt: BCM94360CS2

I’m a freelance illustrator that mostly uses photoshop and occasionally some blender. Especially my cpu could use an upgrade. Drawing in photoshop works fine, but large files and big brushes really make that old quad-core processor work hard! After researching a bit online, I’m quite charmed by the small builds in the mini cases(Cooler master nr200 ;). But I’m having trouble settling on the right mini-Itx mobo and CPU combo. This will probably be my last hackingtosh build ever(given the whole ARM direction), so I want to choose wisely and make it as future-proof as possible. This is also my main working machine so stability and ease of updating are a pre. So I’ll probably ditch clover for OC for this build.

I ‘m considering:

Mobo: Asus ROG Strix Z390-I Gaming

cpu: Intel i7-9700K or an Intel i9-9900K

I'll reuse my gfx-card and stick to 16gb's of ram (it's never full) and will replace the wifi chip on the mobo with a Fenvi BCM94360NG card.

Any other mini-Itx mobo that's a good stable platform to build on?

Is going for a 10th Gen Intel processor more future proof?

And do I really need a cpu with hyper-threading?
