Big Sur - Unable to install on bare metal or update to newer versions on bare metal.

I have a working B2 installation of Big Sur (everything except bluetooth and I2C trackpad) but this was installed to my SSD in VMWare because I was unable to update from B1 to B2, now B3 is out I have ran into much the same issues.

My laptop is a ASUS FX504GM with i5 8300H, 8GB RAM, Micron M.2 SSD (Windows) and Corsair Neutron GTX 120GB (Mac OS). The Corsair SSD is kinda old now but works well.

I am using latest builds of Opencore 0.6.0 and Kexts as follows:

When attempting to update from System Update to the smaller B3 update I get a Download Error, if I run the command in CLI to see what it says, it mentions that the system is not snapshot booted and that it must be to update?

When Attempting to update with the full 12.88GB installer it begins with counting down from 14 - 12 minutes then goes to restart, but apparently this is too soon and the data write doesn't actually happen properly, so booting from the macOS Install partition that it makes doesn't do anything. I can however still boot to macOS Data.

I had a working B2 installer USB but this had the same effect of restarting too soon and stage 2 not being functional.

I created a B3 installer with the same createinstallmedia method but this has the same issue for fresh installs also.

This seemingly leaves me with the only option being to install B3 in a virtual machine again, but this is not ideal going forward and it would be great to finally get the installation/updating issues resolved.

I have seen others with similar issues to mine with bare metal install/updating but so far I haven't found a working solution, if anybody has any ideas I would be quite grateful.
