OpenCore or Clover for Catalina on X58 LGA 1366 (old i7 9xx series)

I have a very stable build of Sierra (10.12.6) on my i7 930 CPU. I am using a Nvidia GTX 760 GPU. I am very seriously considering buying an AMD RX 5500 XT video card so that I may rebuild this machine with Catalina.

I am reading over the sidebar links to OpenCore and all seemed fine until I read past the part about creating the USB boot drive with 10.15.5 (after downloading it with GibMacOS) and configuring the config.plist file. The config.plist section begins with Ivy Bridge architecture and makes no reference to my X58 LGA 1366 architecture.

Should I abandon OpenCore and stick with a Clover build? Has anyone used OpenCore with such old hardware as I have?

Motherboard Gigabyte GA-EX58-UD5
CPU Intel i7 930
Current Video Nvidia GTX 760 4GB
New Video AMD RX 5500 XT 6GB
RAM 12GB 1600MHz DDR3

If you are able to lend advice on how best to configure the config.plist file I would appreciate it. Obviously I have access to my current Clover configuration if that matters at all.
