Which GPU?

I recently purchased a used rig with the following components:

i9 9900k, Z390 Phantom Gaming ITX, TridentZ F4-3200C14D-16GTZSK, GeForce RTX 2080 Ti FE, Samsung SSD 970 EVO Plus 1TB

Seeing as I primarily use iOS/OSX I wanted a Windows box, but would also like to dual boot hackintosh on this machine for non-gaming purposes. Aside from the 2080 Ti, from what I've read here, my components should be fairly easy to use in a hackintosh build.

Given my gaming is more on the mild side, yet eventual VR capabilities are appealing, and hackintosh compatibility considered.. which GPU would the community recommend? I am eyeing the 5700XT Liquid Devil to make use of the system's water cooling but if it's a significant hassle to get running properly may opt for instead a Vega 64. Curious on thoughts and wanted to verify that the rig hardware is a good hackintosh candidate. Thanks.
