Sleep is broken for me on Catalina, how do I downgrade?

Specs: i5-8600k, Gigabyte Z370N WiFi, 16gb Ram, Sapphire Pulse RX 580, 1.25tb Fusion Drive over 970 EVO 250GB m.2 NVME and 1Tb 860 EVO SSD

After messing around with remapping my USB ports a few times now, I’m fairly perplexed and mostly just frustrated. Everything was smooth as butter with 10.14.6. So I think at this point I want to roll back to that.

Stupidly though, using Carbon Copy Cloner, I overwrote the Mojave version of my backup with the Catalina installation when I upgraded from 10.15.0 > 10.15.1 in the hopes that it would return my sleep functionality to normalcy. Of course, it definitely didn’t do that. So since I haven’t been able to figure out how to get sleep working correctly, now I’m thinking that I should reinstall Mojave and just be happy with it until (hopefully) the bugs from Catalina are ironed out.

I still have my Mojave installer that I created last December. Do I just grab the latest version of Mojave and replace the installer on the thumb drive with that one and use the iteration of my EFI that I was using before upgrading to Catalina?

Also, because I backed up with Carbon Copy Cloner, while I have a bootable drive, I don’t believe that I can restore a Mojave system from a Catalina backup. Reading into it further, I don’t believe there’s a way to restore just my data either. Am I incorrect? Did upgrading to Catalina make it impossible to downgrade? I guess my other other would just be trying to do a clean reinstall of Catalina...
