Unsatisfied with the direction of MBPs, thinking of jumping into the Hackintosh pool

Hey all, I've been considering building a Hackintosh for several years now. I used to build my PCs, I tinkered with my Mac Pro's, and I currently use a mid 2012 non retina MBP with 2 1TB SSDs, 16gb RAM. I like to tinker with my computers.

I really don't like how the new MBP's do not have upgradable RAM or hard drives, and data recovery is non existent on those machines.

I am a filmmaker, I will need to edit video on the machine. My own projects, not a huge revolving door of urgent deadlines. I imagine I would get the most powerful and stable machine I could if I went this route. I want an OS X laptop with upgradable/replaceable parts.

It's a bit of a rambling post, but after reading a lot of advice given to noobs like myself would you recommend I give Hackintosh a shot?
