Reverting SSD from APFS to HFS+

I've had a couple of failed attempted getting my hackintosh up and running. I've used both vanilla method and Uni/Multibeast to varying degrees of success. I think I'm close (using vanilla so no fears there) but now I'm running into another problem. When I get the disk utility part and try to format my SSDs, I only have the option for APFS and no Mac OS Extended Journal option. I know this a sort of common issue on OSX. All the solutions I've found online have suggested methods that use terminal, which I obviously can't use since I haven't been able to get OSX installed.

Questions are:

  1. Am I correct that I need my internal SSD boot drive formatted to Mac OS Extended Journaled in order to install OSX?
  2. If I am correct, is there a way to revert my internal SSDs back to their factory state (or whatever state will allow me to format them as Extended Journaled)?

ps. I'm happy to post my system details and all that jazz, but I figured it probably isn't necessary in order to troubleshot this (at least at this point in time)
