Questions from a noob

I've done a lot of searching around to help get some answers, but ultimately get more confused the more I learn. So I apologize if this type of question gets posted a lot here. I've looked at the compatibility list from the sidebar, but its very outdated.

I have a home PC running Windows 10, that I would like to see if I can dual boot. I have a Adobe CS5 Master Suite that I use on my MBP, but would like the option to run it on my desktop if I can dual boot. I really don't want to buy another Suite license or sign up for a CC subscription.

My build:
Gigabyte H170N-WIFI-CF
i5-6500
NVIDIA GeForce GTX TITAN X
Crucial 16gb DDR4-2132 (1066)

I know I would need to change the intel wifi card on the mobo to Broadcom BCM94352Z. I couldn't find any guides on this, especially from the Windows side of things. Is this just a swap out and everything should still work fine in Windows, or is there more to it than that?

What is the most recent version of OSX that I can install? I've confusingly been reading about Mojave and the Nvidia problems, will this also apply to me? Will I only be able to go up to High Sierra?

Should I use the vanilla guide from the sidebar for this install, or do you all advise a different strategy?
