Crash on language selection screen

Hi there, I'm trying out my first hackintosh using an Intel NUC (NUC7I5BNH) and I'm getting stuck at the language selection screen in Mac OS. My SSD is a 250GB 860 EVO and I'm using Mojave. Once I go to boot to Mac OS on my SSD after installing it from my flash drive I crash after about 5 seconds on the initial Welcome page where you choose a language. What's strange about the crash is my mouse works for the first five seconds and then the computer freezes. Once it freezes the RGB lights on my mouse are still on, but if I unplug the mouse and plug it back in they don't come back on. It's the same with the keyboard. I'm wondering if there's maybe an issue with the USB controller? If anyone has any ideas on what I can do to fix the issue please let me know. It's my first time with a Hackintosh so I'm still somewhat illiterate with all this. Let me know if there's any info I can provide that would help. Thank you!
